Fillet Steak with fried mushrooms and Bearnaise Sauce

4 fillet steaks, or rib eye steaks, about 2-3” thick
25g (1oz) butter
100g (4oz) oyster mushrooms, sliced thickly
4 tablespoons Mary Berry’s Bearnaise Sauce

Preheat a grill pan until very hot.  Spread a little butter and seasoning on each side of the steaks.  Cook in hot grill pan for about 2 mins each side (rare) 3 mins each side (med) 4 mins each side (well done).

Set aside to rest.  Add mushrooms to same hot pan and fry for a couple of mins until just cooked.

Heat the Bearnaise Sauce gently in saucepan until just hot.  Arrange steaks on plate with mushrooms on top and spoonful of sauce on the side.

Serves 4
