Penne al Caesar

This dish is absolutely delicious and very quick to do.

Serves 2

250g fresh or dried penne
2 tbsp olive oil
175g (6oz) pancetta, thinly sliced
100g parmesan, half finely grated, half as shavings
4 tbsp fresh parsley
sea salt and freshly ground black pepper

1. Boil the penne in a large saucepan of lightly salted boiling water for about 8 - 10 minutes or according to packet instructions, until just tender.  Rinse quickly under cold water to stop the cooking process.

2. Meanwhile heat 1 tbsp of the oil in a frying pan, add the pancetta and fry until crisp.

3. In a large bowl, mix the grated parmesan, parsley, pancetta, and Mary Berry's Caesar Dressing.

4. When the pasta is cooked, drain, rinse and toss immediately with the rest of the ingredients in the bowl, taste and season.

Serve with a fresh green salad and warm bread.
