
Seared Salmon with Mustard Dressing
This is such a great recipe and really can be done in minutes.
4 x 150g (5oz) fresh salmon tail fillets, skin on salt & freshly ground black pepper olive oil a few lettuce leaves, packet of wild rocket or watercress. 1 lime to garnish
Dressing: 6 tablespoons Mary Berry's Mustard Dressing
1. Heat a non stick pan until piping hot. 2. Season the salmon, brush each side with oil. Arrange the salmon in the hot pan, skin side down and fry over a high heat for about 3 minutes, carefully turn over and fry for a further 30-45 seconds. 3. Serve the warm salmon on a bed of lettuce, rocket or watercress with a little dressing poured over. Slice the limes in quaters and garnish.
