Fast Baked Herb Crusted Cod with Minted Peas Try and buy line caught Atlantic cod if you can, this dish is always a winner with the family and we hope you enjoy it as much as we do! You can use our Lemon & Thyme Sauce instead of our French Herb Dressing if you prefer. 6 x 150g (5oz) cod fillets, skinned salt and freshly ground black pepper 350g (12oz) frozen peas 2 tablespoons fresh mint chopped 2 tablespoons fresh parsley chopped Topping 50g (2oz) fresh white breadcrumbs 100g (4oz) Mary Berry's French Herb Dressing 2 tablespoons fresh parsley chopped grated rind of 1/2 lemon 1 tablespoon capers Heat the oven at 180 degrees/ Gas Mark 4 1. Season both sides of the cod fillets and place on a baking sheet. 2. Mix all the topping ingredients together and spoon the topping mixture on each cod fillet. (If you are doing this in advance just put your prepared cod in the fridge now). 3. Place in a pre-heated oven for about 10-15 minutes,when the cod is opaque in colour, it should be ready. Sprinkle with chopped parsley and serve with minted peas. 4. Measure peas into a saucepan, cover in salted water and boil until cooked, drain, stir in fresh mint and serve with the cod.
